Wedo’s Tacos permanently closes after barely 12 months of business

FORT COLLINS, Colorado – Wedo’s Tacos & Tequila, a Mexican restaurant located in Jessup Farm Artisan Village, has ceased operations effective mid-December 2023. The closure marks the end of a brief tenure for the establishment, which had only opened its doors in November 2022. Since its closure, the eatery has since been listed on Google as permanently closed.

The space previously housed Cacciatore at Heller’s Kitchen, an Italian eatery established in 2017 by partners Mick Occhiato and chef Troy Heller. Cacciatore ultimately closed its flagship Fort Collins location in the fall of 2022 due to a combination of limited space and staffing challenges.

Occhiato and Heller subsequently repurposed the venue, transforming it into Wedo’s Tacos & Tequila, offering a more casual dining experience with tacos, Mexican cuisine, and margaritas. During its short tenure, the venue received solid reviews from the local community.

The decision to close Wedo’s during the university’s winter break stemmed from staffing complications arising from employee schedules. A significant portion of the restaurant’s staff consisted of Colorado State University students, whose requests for time off during the break ultimately prompted the closure ahead of the planned year-end shutdown.

The departure of Wedo’s leaves the space at Jessup Farm Artisan Village unoccupied once again. It remains to be seen what future plans lie ahead for the location.
